Holla!

Today is free queso day at Moes!!  Did you go get some?
Tomorrow, if you dress up like a pirate, you get a free dozen donuts from Krispy Kreme. Will you do it?
Shame on you if you don't take advantage of free food people...Shame.

In honor of food and as suggested by one of my most precious friends/fellow blogger, I'd decided to do a "Becky's Favorite Freezer Meals" blog post.

Here goes.

Taco Soup (from Church friend)
 1 lb of ground pork and 1 lb ground beef 
1 can of black beans
1 can white corn
1 can hominy
2 cans of rotel
1 can of green chilies
 1 packet of taco seasoning
1 packet ranch dressing seasoning. 
Brown your meat and drain.  Throw EVERYTHING into a bag and freeze. 
When ready, pull out the day before and let thaw in fridge.  On cooking day, dump into a crockpot, add a little water (you can add as much or as little as you want) and cook on low for 10 hours.
Serve with cheese, chips, additional jalapeno peppers etc

Taco Chicken Meat (from church friend)
Take 4-5 chicken breasts and dump them into a bag with a jar of salsa and a package of taco seasoning mix. FREEZE. Let thaw the day before you want to use it, and when ready, dump into a crockpot and cook on low for 6-8 hours. Take out and shred!
Serve in tacos!

Bacon Ranch Chicken (from Pinterest)
4 chicken breasts
2 tbsp real bacon bits
1tsp minced garlic
1pkg ranch dressing mix
1 can cream of chicken soup
1 cup sour cream
Dump everything into a bag and freeze. Let it thaw for a day in the refrigerator. Take out and cook on low for 6-8 hours.  Serve plain or with rice/noodles.

Slow Cooker Pizza Bake (from Pinterest)
1 1/2 lbs. ground beef 
1 medium onion (optional), diced
1 green bell pepper, diced
8 oz sliced pepperoni
4 oz (1 cup) shredded mozzarella cheese
8 oz (2 cups) shredded cheddar cheese
12 oz Rigatoni noodles, cooked                 
15 oz pizza sauce
26 oz Spaghetti sauce
1. Brown meat, onion and pepper in frying pan.
2. Drain grease and add pizza sauce and spaghetti sauce
3. Combine all ingredients in a large crock pot (spray with non-stick spray first).
4. Cook on HIGH for 30 minutes and then LOW for 2 or 3 hours until the cheese melts.
Note:  This makes a lot of food, so I usually freeze half before cooking it.  Later it can be thawed and cooked in the slow cooker as directed above.

**I browned the beef and threw everything BUT THE NOODLES into a bag to freeze.  Once I take it out and it thaws, throw the noodles in with the stuff into the crockpot and cook!

Crockpot Island Pork (from Pinterest)

6lbs pork roast cut into bite size pieces
2 oranges, peeled and cut into pieces 
2 cans (14oz) crushed pineapple
4T soy sauce
1 t ground cloves
½ t pepper
4T cornstarch
4T water

Divide ingredients between 2 1-gallon size zip lock bag. Seal bag. Squish the ingredients together and freeze. On cooking day, dump contents of bag into crockpot and cook on low for 8 hours. Serve over brown rice. 

Creamy White Chicken & Artichoke Lasagna (from Kraft)

Ingredients
2 cups boneless skinless chicken breast, cooked and shredded
1 can (14 oz.) artichoke hearts, chopped
Some Chopped Mushrooms
1/2 cup chopped sun-dried tomatoes
1 pkg. (8 oz.) KRAFT Shredded Mozzarella Cheese with a Touch of PHILADELPHIA, divided
1/2 cup KRAFT Grated Parmesan Cheese
2 packages (8 ounces each) cream cheese, softened
1 cup milk
1/2 tsp. garlic powder
1/4 cup basil, chopped
12 lasagna noodles, cooked

Directions
Heat oven to 350°F.
Combine chicken, artichokes, tomatoes, 1 cup mozzarella and Parmesan.
Beat cream cheese, milk, and garlic powder with mixer until well
blended; stir in 2 Tbsp. basil. Mix half with the chicken mixture.
Spread half of the remaining cream cheese sauce onto bottom of
13x9-inch baking dish; cover with 3 noodles and 1/3 of the chicken
mixture. Repeat layers of noodles and chicken mixture twice. Top
with remaining cheese sauce and mozzarella; cover.
Bake 25 min. or until heated through. Sprinkle with remaining basil.
** TO Freeze, usually I assemble everything and then pop it into the freezer before baking it.

Slow Cooker Bolognese Recipe: (Six Sisters)
2 lb. Italian sausge (I did 1 lb of sausage and 1 lb of ground beef)
6 Tbl. minced onion flakes
8 cloves garlic, minced
2 28 oz can crushed tomatoes
2 6 oz can tomato paste
4 Tbl. sugar
2 Tbl. dried oregano
2 Tbl. dried basil
2 tsp. salt
1tsp. pepper
Cook Italian sausage in large skillet until browned. Transfer to 5 quart slow cooker. Stir in all remaining ingredients, mix well. Cover and cook on low for 8 hours. Serve with your favorite pasta.
**To freeze:  Cook meat and throw everything into a bag and freeze it (before cooking)!
